Menu Plan Monday

                                                                           


I love Organized Junkie!  Here's here Menu Plan Monday.  I'm going to see if this works!  I know it's a day late (this week), but hopefully I'll get some inspiration going.

Monday—We had tacos. Quick fix so Daddy could join us before going out of town. Since I'm on Weight Watchers, I don't do meat right now, so I had a boca burger instead Mmmmm mmmmm mmmmm

Tuesday—busy night with soccer, Cub Scouts and dance, so we're doing tuna melt sandwiches and veggies.  Tuna's already made, and I'll spread it on toast with cheese.

Wednesday—Halloween, so we're doing Pizza Hut. They have a good coupon, so that's quick and easy. I can have 1 slice and salad and be just fine.

Thursday—Crock pot rotisserie chicken with potatoes. This is a WW recipe, but is always begged for from the family. Simply take a whole skinless chicken, clean it out, spray Pam on it, season it (I use rosemary, garlic salt and pepper). Wad rolls of aluminum foil in the bottom of the Pam sprayed crock pot (I don't like the waste, so I wrap baking potatoes seasoned with rosemary in the foil), lay the chicken on top of the foil or potatoes and cook on low for 6 hours or high for 4. I usually serve this with fat free, sugar free vanilla pudding with a dollop of fat free cool whip and a maraschino cherry.

Friday—Grilled chicken and corn on the cob

Saturday—Whole wheat pasta and marinara with turkey meatballs

Sunday—leftovers
