Menu Plan Monday

Have I really not been here this month? WOW!  This has been a BUSY November!

                                                    

Monday: WW Crockpot Chicken with potatoes. Fat free, sugar free chocolate pudding with fat free whipped topping for dessert. Put it in pretty red-wine glasses to make it special.

RECIPE: Spray the inside of your crockpot with Pam. EITHER wrap baking potatoes in aluminum foil, or lightly wad enough foil to cover the bottom of the crock. Take a whole chicken. Remove the skin. Wash thoroughly inside and out. Spray with Pam, coat with your favorite seasonings (I use Lemon Pepper, Rosemary and salt and pepper). Cook on low for 6-8 hours. After 4 hours, if I don't bake the potatoes, I add 3 cans of those little mini potatoes, seasoned with rosemary and garlic.  THIS IS A WEIGHT WATCHERS RECIPE, AND MY FAMILY BEGS FOR IT ALL THE TIME!

Tuesday: Ham and beans (I will soak the beans overnight). I have never made this, but it sounds easy. I will make it in the crock pot. Serve with corn bread.

Wednesday: Crock pot pork chops. I just bake them in the crock pot covered with a mixture of 1/4 c. olive oil, raspberry vinager, 1/4 c. brown sugar and a can of peaches in light syrup. Mix the juice into the sauce, then top the chops with the peaches. My DH doesn't do pork chops, but the kids love them, so we're making him eat them this week. I'll serve this with green beans and jello salad

Thursday:  Turkey roast and mashed potatoes. They'll have gravy. I won't.

Friday:  Burgers. Make mine a boca, please! Served with baked potatoes.
