RECIPE: Cola Chicken
This is absolutely yummy. I've only made it in a covered frying pan, but will be making it in my crock pot tonight. I'll update to tell you how it was.
INGREDIENTS:
Non stick spray (like Pam, but I use the cheap stuff)
6 chicken breasts
1 1/2 cups ketchup
12 oz. diet cola (we don't have soft drinks in our house, so I grab a can of the $.23 Shasta diet cola at Price Chopper after dropping the boys at school).
Tools:
Non stick frying pan
Lid
Wooden spoon
Instructions:
Even though the pans are non stick, I always spray the pan to keep the gunk from sticking.
Toss the chicken in the pan on medium to high heat.
Mix the ketchup and cola to make a sauce.
As the chicken starts to sizzle, add the sauce mixture.
Bring to a soft boil.
Cover.
Lower heat and simmer for 45 minutes.
Uncover, raise heat, and cook at a boil for approximately 5 minutes.
For a really healthy dinner, I typically serve this with steamed winter vegetables and sugar free, fat free chocolate pudding served in champagne flutes, (just a box of instant sugar free pudding made with skim milk).

I think you had a delicious dinner, maybe I'll try this too, although chicken is not my favorite, but you provided me a good description here.
