Monster Cakes

NOTE:  This is not courtesy of me. The other night, I went to my neighbor's house as they were making dinner. Perfect timing, I know!  But I couldn't leave. I was completely fascinated by what she was fixing!  So she shared her recipe with me.  Her parents used to run a B&B, and this was one of her mom's recipes (thanks, Esther!).

I made these Monday night when Darren and Matt were at camp. The response was amazing!  So amazing that I will probably make it again tonight.


MONSTER CAKES:

Serves 2

Ingredients:
2 servings 
2 eggs
1/2 cup milk
1/2 cup flour
1/2 stick butter or margarine
 
Heat oven to 425.  Melt margarine in a 10 inch pie plate while you mix the batter.
In blender or with mixer, mix all ingredients until just mixed.  Pour into pie plate with the melted butter.  Bake 12-15 minutes until puffed and golden brown on edges. 

Serve with lemon wedges (or lemon juice) and powdered sugar.  I also added strawberries and either confectioner's sugar or whipped cream. It would also be delicious with butter and jam.

This recipe fills one pie plate, you'll want to make more!
